Ingredients: 1/2 Cups Spelt Flour; 1/2 Cups Old-fashioned Rolled Oats; 1/4 Cups chopped Pecans, Almonds, Walnuts or other nuts; 1 1/2 to 2 Tsp. Cinnamon; 1 Tsp. Baking Soda; 1 Pinch of Salt; 1/3 Cups Organic Cane Sugar; 1/4 Cups Honey; 3 Large Peaches, organically grown, always better; 3 Tbsp. Butter, unsalted; 1/3 Cups of Plain Yogurt, Greek-style is better; 3 to 4 Tbsp. Water

Servings: persons

1/2 Cups Spelt Flour
1/2 Cups Old-fashioned Rolled Oats
1/4 Cups chopped Pecans, Almonds, Walnuts or other nuts
1 1/2 to 2 Tsp. Cinnamon
1 Tsp. Baking Soda
1 Pinch of Salt
1/3 Cups Organic Cane Sugar
1/4 Cups Honey
3 Large Peaches, organically grown, always better
3 Tbsp. Butter, unsalted
1/3 Cups of Plain Yogurt, Greek-style is better
3 to 4 Tbsp. Water

Slice your peaches into quarters and half them.

Put a heavy saute pan or a skillet on medium heat and add your peach slices.

Add about 3 or 4 table spoons of water and the honey.

Combine it all and stir occasionally to make sure peaches are cooked evenly.

(Note: I prefer to use a cast iron 3 qt.

Turn on your oven, and set it to 350 deg.

Combine all dry ingredients together and mix well.

Add butter cut into small cubes and work it into the mixture with your hands.

Now add the yogurt and stir it well.

When a little liquid is left and the peaches appear soft and give off a light and sweet aroma, turn the heat off.

Level out the peaches and spread your mixture over the top of the peaches.

Put your saute pan, skillet or a casserole into the oven and if you have a top, put it on.

Cook for about 15 minutes with top on.

Remove the top and cook for another 10 to 15 minutes, or until the top is brown and crusty looking.

Let cool to room temperature and enjoy!
