Roux (In The French Tradition)

   Melt desired amount of butter in a pan and add equal amount of flour.

   Stir vigorously until the mixture forms a smooth paste which leaves the sides and base of pan cleanly. It will be light brown.

   Add about 1/5 of the quantity of your chosen liquid (see above) and allow to boil without stirring.

4. 4

   Stir until the mixture blends smoothly, stir vigorously and add the remaining amount of liquid, beating well.
