Roasted Sweet Potatoes with Latin Spice Mix

   Heat oven to 450 F.

   Mixed spices, dried oregano and salt in a small bowl.

   Wash and dry the potatoes.

   Cut them into relatively thin strips.

   Coat them in olive oil with your hands and try to cover all the pieces.

   Set them in a single layer onto a large rimmed baking sheet.

   Sprinkle the spice mixture over the fries, making sure to coat them thoroughly.

   Put them in the oven for 10 minutes.

   Take them out of the oven and check to see if they are golden and roasted.

    If not, turn them over and put them in the oven for 5 more minutes or until they reach your desired level.
