Roasted Lamb with Craisin Stuffing

   Combine Philly*, breadcrumbs, craisins, herbs, garlic, orange rind and seasonings.

   Make about 6 slashes into the lamb approx.

   8-10cm in length, cutting right down to the bone.

   Press stuffing mixture into each cavity.

   Tie the lamb back together with string.

   Drizzle with oil and bake at 190 degrees C for 1.5-2 hours.

   Allow to rest covered for 10 minutes before slicing.

   Serve with seasonal vegetables and meat juices.
