Roasted Grape Tomato Sauce

   Preheat the oven to 400F.

   Place tomatoes in a 9x13 glass baking dish.

   Peel garlic and smash slightly. Add to the baking dish.

   Drizzle the olive oil and sprinkle the salt on top of the tomatoes. Add a dash of pepper.

   Roast the tomatoes for 45 minutes until the juices are released from the tomatoes and the garlic is soft. Fresh from the garden tomatoes have a high water content. Store-bought have a low water content so you may need to add 1/4 cup water at a time during cooking.

   Remove the dish from the oven and let it cool slightly.

   Pour everything into a food processor with the basil and blend until you reach your desired consistency.
