1 Spanish onion, finely diced
1 tablespoons minced garlic
1 cup dry white wine
5 cups vegetable stock
1 cup heavy cream

8 ounces chorizo
6 (8-inch) flour tortillas
1/2 cup crumbled goat cheese
1/2 cup grated Monterey Jack cheese
2 tablespoons finely chopped cilantro

Preheat the oven to 450 degrees F. Place 4 tortillas on an ungreased baking sheet.

Divide the cheeses, chorizo and cilantro among the 4 tortillas and season with salt and pepper to taste.
