Salads
Servings:persons
1
Preheat oven to 400 degrees (I use a toaster oven)
2
In an oven-proof bowl place rinsed basil & oregano and garlic cloves
3
Place cherry tomatoes on top of herbs
4
Sprinkle salt and pepper, drizzle olive oil over tomatoes
5
Bake at 400 degrees for about 15-20 min, checking to make sure tomatoes are roasting. Its ok & preferable for them to get slightly charred and/or pop open. The juices from the tomatoes and the oil should keep the herbs in the bottom from burning.
6
Remove from oven, drizzle balsalmic vinegar over.
7
Let cool to warm
8
Process in small food chopper till pureed.
9
Pour into a clean lidded bottle and refridgerate.
10
Will keep about 1 week refridgerated.
