Roasted Beet & Yogurt Dip

   Toss beets with oil and roast (skin on) in a roasting pan at 400 degrees F for 45-60 minutes.

   Remove from oven and allow to cool.

   When cool enough to handle, remove skins.

   Add beets to the bowl of a food processor with garlic.

   Puree on high until a smooth consistency is reached.

    Add in yogurt and salt and pepper.
