1 whole Onion, Cut Into Eighths
4 cloves Garlic, Peeled And Halved
1 teaspoon Salt
1 teaspoon Dried Leaf Oregano
2 whole Bay Leaves (small)
3 cups Water
1 Tablespoon Olive Oil
16 whole Small Boiling Potatoes
2 cups Chicken Broth
1/2 cups Tequila
1 Tablespoon Dijon Mustard
2 Tablespoons Sour Cream (optional)

Place the first seven ingredients into a large pot (meat, onion, garlic, salt, oregano, bay leaves, water) and cook over high heat until water evaporates, about 45 minutes (onions will look very dark, nearly burnt, at this point).
