Ingredients: 3 Tbsp. of unsalted butter; 1 small finely chopped onion; 1 small finely chopped, peeled carrot; 1 finely chopped celery stalk; 1 minced shallot; 8 oz. of finely chopped sausage; 1 roasted, peeled red pepper, cut into slices; 1 1/2 Tbsp. of fresh minced thyme; 1/2 Tsp. of fresh minced rosemary; Salt and pepper to taste; 4 cups of sourdough bread dice; 1 cup of chicken stock or broth; 4 Cornish Game Hens; 2 Tbsp. of olive oil

3 Tbsp. of unsalted butter
1 small finely chopped onion
1 small finely chopped, peeled carrot
1 finely chopped celery stalk
1 minced shallot
8 oz. of finely chopped sausage
1 roasted, peeled red pepper, cut into slices
1 1/2 Tbsp. of fresh minced thyme
1/2 Tsp. of fresh minced rosemary
Salt and pepper to taste
4 cups of sourdough bread dice
1 cup of chicken stock or broth
4 Cornish Game Hens
2 Tbsp. of olive oil

In a large frying pan, melt 1 Tbsp. of the butter over medium-low heat and saute the onion, carrot, celery, shallot and sausage for 7 minutes

Add the roasted pepper, garlic, thyme, rosemary, salt and pepper and saute for 5 minutes.

Stir in the bread cubes and add stock or broth until the bread is slightly moistened. Remove from heat and let cool.

Preheat the oven to 350 degrees F. Line a large baking dish with parchment paper.

Rinse the hens well and pat them dry.

Stuff the bread mixture into each hen cavity (optional) and transfer the hens to the prepared dish.

Rub the hens with olive oil

Cut up the remaining 2 Tbsp. of butter and add it to the bottom of the pan.

Bake the hens, basting occasionally, for 50 minutes or until the juices run clear when a thigh is pierced

Arrange a hen in the center of each of 4 plates and serve immediately
