Heat the milk and cream in a saucepan until almost boiling. Remove from the heat.

Place the chocolate, salt, egg and 1/2 tsp vanilla extract in a food processor and blend for 2 mins. Add the heavy cream and the milk mixture gradually and blend for a further 2-3 mins until smooth and creamy. Pour the mixture into a bowl then cover and chill for 15 mins.

Completely peel the orange, remove the segments using a sharp knife then squeeze the juice from the connective membranes. Slice the segments into pieces. Mix the cognac, 1/2 tsp vanilla extract and orange juice together then stir in the fruit. Divide the chocolate dessert between 4 bowls and top with the fruit. Serve.
