Place milk, 3 cups water, sugar, corn syrup, cinnamon and vanilla in a large saucepan over moderate heat. Cook and stir for 4-5 mins or until sugar and corn syrup dissolve. Bring to a boil. Remove from heat, cool slightly.

Sprinkle gelatin over 1/3 cup boiling water in a small heatproof dish and stir until completely dissolved; cool slightly. Stir gelatin mixture into milk mixture until combined.

Add chocolate to milk mixture; stir slowly until chocolate has melted and mixture is smooth. Pour chocolate mixture through a fine sieve into a 6 1/2 cup gelatin mold.

Chill for 6 hours or overnight until set. Dip base of mold briefly into warm water; turn out onto a large serving plate.
