Combine rice, milk, heavy cream, vanilla bean and salt into baking dish.

Set the Smart Oven+ Attachment base pan with heating element and Steamer Water Basin Pan on the oven rack. Add 4 cups of water to Water Basin Pan and set Perforated Steamer Tray in place. Place baking dish on Perforated Steamer Tray and cover with foil, then cover with Lid.

On STEAM mode, steam for 1 hour. Remove foil and continue steaming an additional 15 minutes. Remove from oven. Pudding will still be a bit saucy, but the rice will continue to absorb while it cools.

Melt butter in skillet over medium heat. Gently toss pears with sugar and lemon juice. As soon as butter bubbles, add pears, cut side down and cook until golden and caramelized, 5-7 minutes, turning to brown on all sides. Set aside.

When rice has cooled slightly, scoop into serving dish along with caramelized pears.

To brulee the pudding, cool it completely or refrigerate overnight. Sprinkle lightly with sugar (1-2 tablespoons) and place under broiler or use torch to caramelize sugar.
