Ingredients: 1 English muffins; 1 sliced cucumber; 1 Green bell pepper; 1 cilantro for decoration; 1 can 10 oz. chicken in water; 1/3 cup mayonnaise; 2 tbsp diced onion; 1 tbsp dill relish; 1 pinch pepper; 1 pinch Garlic salt

Servings: persons

1 English muffins
1 sliced cucumber
1 Green bell pepper
1 cilantro for decoration
1 can 10 oz. chicken in water
1/3 cup mayonnaise
2 tbsp diced onion
1 tbsp dill relish
1 pinch pepper
1 pinch Garlic salt

half your English muffins and lightly toast.

cut out Shamrock shape, I just used sliced cucumbers as a guide.

drain chicken use fork to lightly seperate add all ingredients together.

slice bell pepper for stem, and also slice cucumber to desired thickness for topping of sandwich

Now assemble.

add chicken salad to muffin top with cucumbers, add in bell pepper and top with cilantro.

I garnished with more cucumbers that can be eaten off plate..
