Quick French Tarts
12 thin slices of soft bread, crusts removed
Olive oil
2 Tbs butter
1 bay leaf
1 tsp ground thyme
1 tsp poultry seasoning
1 tsp dried basil
2 onions, very thinly sliced
1/2 tsp lemon juice
Salt and pepper to taste
2 cups Shredded gruyere cheese

Heat oven to 350 deg F

Brush both sides of bread with olive oil and press each slice into a 12 cup muffin tin. Bake bread for 8 minutes or until lightly toasted. Put butter, spices and onion in a medium skillet and cook until onions are caramel colored (about 15 minutes). Remove bay leaf. Add lemon juice and stir. Add salt and pepper.

Fill the toasted bread cups with filling and top with cheese. Place tartlets back in oven and cook until cheese is bubbly and begins to brown.
