Lay four tortillas on your work surface to assemble quesadillas all at once.

Place ingredients on the tortillas starting with one slice of cheese.

Any kind will work, but I like colby or cheddar best.

You can also use queso fresco if you have it.

Next add to each quesadilla: 2 tablespoons beans, 2 tablespoons rice, a dash of spices (garlic powder, onion powder, chili powder all work well), and 1/4 cup spinach leaves.

Top with a second slice of cheese and another tortilla.

Head a cast iron skillet and spray with canola oil.

Working with one quesadilla at a time, fry until crisp on both sides and cheese is melted.

Serve with salsa, sour cream and/or guacamole.
