Purple Potato Pancake

   In a medium bowl, combine potatoes, egg, flour, salt and pepper. Form into uniform patties.

   Heat a 9-inch frying pan over medium heat. Add oil and swirl around the pan to evenly coat it. Add patties to pan. Cook on each side 3-4 minutes or until golden brown and delicious.

   If you like, serve with chopped green onions and honey mustard sauce for the colors of Mardi Gras.
