Preheat oven to 350 F.

In a medium sized bowl whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice then set aside.

In the bowl of a stand-in mixer fitted with a paddle attachment cream together the butter and both sugars. Add in the pumpkin, egg, and vanilla and mix until combined. On low speed, mix in the dry mixture until almost incorporated. Fold in the chocolate chips and walnuts until they're incorporated throughout the dough.

Line a baking sheet with parchment paper, then scoop the dough into heaping tablespoon-sized balls (I used a small ice cream scoop). Place the balls of dough about 1 inch apart on the baking sheet. Slightly flatten them with the palm of your hand (warning: the dough is sticky!). Bake for 14-16 minutes or until the edges are slightly browned. Remove pan from the oven and allow cookies to sit on the baking sheet for 2 minutes. Then transfer cookies to a cooling rack to cool. Enjoy!
