mix together crushed graham crackers and melted butter. Press into 9 inch springform pan.

Beat cream cheese until fluffy and add 6 egg yolks, one at a time, until well incorporated. Stir in lemon juice and add vanilla.

In a separate chilled bowl, beat cream untill it holds stiff peaks. In another bowl beat egg whites until they hold stiff peaks. Fold the cream and egg white mixture together and pour into the springform pan.

Bake the cake in the middle of a slow oven (300 deg) for 1 hour. Reduce the temperature to 250 degrees and bake for an additional hour. Open the door and let the cake stand until cooled

In a saucepan bring to a boil the water and sugar and add the cream of tartar

continue cooking until it is light caramel color. Add 1/2 c chopped pecans. Pour mixture onto Silpat or other non-stick surface. Once cooled chop praline and sprinkle over the top of th echeesecake.
