First step is to peel the potatoes and put them in boiling salt water till you can easily stick a fork in them.

Meanwhile, chop the onion and garlic and grate the carrots. Add the olive oil (or any other oil you prefer) to a pan then add the vegetables. Add 150ml water and let it steam fry till all the vegetables are softened. (Add more water accordingly.)

Sieve the potatoes from the boiling water when ready and return to pot. Once, you've steamed fried the vegetables and they have soften, add them to the pot of potatoes. (Note, that there may be some liquid from the steam fry, make sure that doesn't slip in when adding the veg to the pot.)

Mix in the chopped ham and cherry tomatoes along with 3 whole eggs and 2 egg whites. Also add the creme de fraiche and the 3 tablespoons heaped with flour. Also add some black pepper. Mix all the ingredients well in the pot and trashed it to a non stick dish.

Level both sides of the dish with the mixture then garnish with rose Marie and Parmesan cheese. (Other cheese will do aswell like swiss cheese or manchego.)

Cook in a preheated oven for about 30min or until it turns into a light brown color. Let it set for a bit before servings. Keep leftovers for tomorrow's lunch.
