12 lb bacon, diced
1 small onion, diced
2 tablespoons flour
15 ounces chicken broth

4 cups potatoes, diced

Heat olive oil in bottom of soup pot; add bacon, cook until bacon is almost crisp but still limp.

Add onion and cook a few minutes more.

Remove bacon and onion with slotted spoon and set aside.

Add flour and stir until blended; slowly add the broth, stirring all the while.

Add water and bring to boil whisking or stirring until smooth and thickened.

Add thyme, garlic powder, onion powder and salt.

Add more seasoning according to your preference if needed.

Add milk, stir and reduce heat to simmer.

Cover and continue to simmer until potatoes are tender, about 20 minutes.
