1/2 lb. Mozzarella
3 tomatoes, peeled
1 tsp. oregano
1 tsp. basil
1/2 c. grated Parmesan
1/4 c. butter, melted

Peel, cook and mash the potatoes.

Butter a deep pie plate. Sprinkle lightly with flour and spread the mashed potatoes on the bottom.

Cut cheese into 1/2-inch slices and arrange half the slices on the potatoes.

Cut the tomatoes into 1/2-inch slices and arrange all of them on the cheese. Sprinkle with oregano, basil, salt and pepper. On top, arrange rest of Mozzarella and Parmesan and pour over all the melted butter.
