Pork In Tomatillo Sauce

   Cut the meat into medium-sized pieces and place in a skillet with a splash of water, salt, and pepper. Cover and allow to cook until slightly browned.

   Remove the meat and set aside. Saute the onion and garlic in the olive oil, using the same skillet. Add the tomatillo and the chipotle. Stir, cover, and cook on low heat for a few minutes so that the flavors meld.

   Add the meat, add more salt if needed, and mix well. Serve.
