Place ham cubes in a 2 1/2-quart glass (microwave-safe) casserole.

Combine brown sugar, cornstarch, ginger and garlic powder in a 2-cup liquid measure.

Stir in soy sauce and catsup. Pour over ham and stir to coat all of ham.

Cook on High for 3 minutes.

Add onion and green pepper.

Cook on High for 4 minutes. Drain pineapple, reserving juice.

To pineapple juice, add water to make 1 cup of liquid.

Add vinegar and soy sauce.

Stir in cornstarch.

Pour over cooked ham.

Add water chestnuts and mushrooms which have been drained and also pineapple chunks.
