Pork Fillet En Croute

   Preheat the oven to 200u00b0C.

   Heat the oil in a frying pan and cook the pork for about 10 minutes, turning frequently.

   Mix the mayonnaise, shallots and herbs together.

   Place the pastry on a board and the pork on top. Cover with the mixture.

   Fold the excess pastry over the meat to cover it completely.

   Whisk the egg yolk and brush over the pastry to give it a golden brown colour. Bake for 45-50 minutes, until the meat is cooked through.
