Preheat oven to 400u00b0F. Lightly grease 4 - 13 oz ramekins.

Heat oil and butter together over high heat. Fry bacon for 3-4 mins, until crisp. Set aside. Toss pork in flour, shaking off excess. Brown for 4-5 mins. Set aside. Saute onions, carrot and garlic for 4-5 mins, until onion is tender. Deglaze with beer. Return pork and bacon to pan along with apple, honey and spices. Bring to a boil, reduce heat and simmer, uncovered, for 15-20 mins, until pork is tender. Let cool for 10 mins then chill.

Spoon chilled mixture between ramekins. Brush puff pastry with egg then cut into 4 squares. Drape over ramekins, egg-side down. Trim edges and pierce tops for steam vents. Bake for 15-20 mins, until puffed and golden. Serve with sauce or chutney.
