Ingredients: 4 tablespoons olive oil; 6 pork chops thin; 1 pound potatoes peeled and cubed; 1 onion peeled and diced; 3 peppers 1 red, 1 yellow and 1 green deseeded and diced; 2 pounds canned tomatoes; 1 cup tomato juice; 14 ounces beans cans, 1 white, 1 red kidney, drained and rinsed in cold water; 2 ounces monterey jack cheese grated; 1/2 cup sour cream; parsley to garnish

4 tablespoons olive oil
6 pork chops thin
1 pound potatoes peeled and cubed
1 onion peeled and diced
3 peppers 1 red, 1 yellow and 1 green deseeded and diced
2 pounds canned tomatoes
1 cup tomato juice
14 ounces beans cans, 1 white, 1 red kidney, drained and rinsed in cold water
2 ounces monterey jack cheese grated
1/2 cup sour cream
parsley to garnish

Heat the oil in a large, deep ovenproof frying pan. Add the pork and sear on both sides for a few mins. Season with salt, pepper. Transfer to a baking dish and set aside.

Add the potatoes to the pan and fry a few mins until golden. Add the onion and peppers and saute briefly. Stir in the canned tomatoes, breaking them up with a spoon. Add the tomato juice and beans. Bring to a boil, season well and simmer 15 mins.

Preheat the oven to 400u00b0F. Add the beans and sauce to the baking dish with the meat. Mix the cheese and sour cream and spoon in dollops on top. Cook for about 25 mins until the meat is tender, then sprinkle with parsley to serve.
