Pop Pop's Roast Leg of Lamb

   Preheat Oven to 400F

   Score 1/4 inch deep diamonds in lamb.

   Mash & chop garlic into fine peices and mix together with olive oil, savory, rosemary, salt & pepper.

   Insert and rub mixture all over lamb.

   Reduce oven temperature to 325 and bake about

   30-35 minutes per pound for a 6-8 lb.

   Or use a digital meat thermometer.

   (Take roast out of oven when thermometer reaches 130 degrees F and let rest for 20 minutes: Roast will continue to cook while resting.

    Keep thermometer in roast while it is resting and when it reaches desired doneness, you may carve the roast.
