In a deep-sided pan, combine the white wine, 3 cups water, lemon juice, star anise, sugar, vanilla extract, and honey and bring to a boil. Reduce heat to a simmer and lower the pears into the hot syrup and poach for about 20 minutes, turning occasionally. Make sure the syrup stays at a simmer, but does not boil.

Using a slotted spoon, remove pears from the syrup and set aside to cool. Meanwhile, leave 2 cups of the syrup in the pan, and cover the pears with the remaining syrup. Boil the 2 cups of syrup in the pan for about 20 minutes. Remove from heat and let cool.
