Pulse 1 1/2 cups of the flour and butter in a food processor until mixture resembles coarse breadcrumbs. With motor running, add 1/4 cup iced water. Process until dough comes together to form a ball. Place on a floured board and bring dough together using hands. Flatten to form a disc and wrap in plastic wrap. Refrigerate 50 mins.

Preheat the oven to 400u00b0F. Line a baking pan with parchment paper.

Roll pastry between 2 sheets of parchment paper to a 12-inch round. Place on prepared pan. Combine 1/3 cup of the sugar, ground almonds and remaining 1/4 cup flour and sprinkle on pastry, leaving a 2-inch border. Top with sliced almonds. Arrange plums over almonds. Sprinkle with remaining sugar, adding more if plums are tart. Fold pastry edges over plums.

Bake 30 mins. Brush plums with a little warmed jam. Bake further 5 mins, until pastry is golden. Cool in pan on a wire rack. Serve with whipped cream.
