For the pizza dough, combine the flour, yeast, sugar, salt, 1 cup water and half the oil in a large bowl. Knead lightly and form into a ball. Coat with the remaining oil, then cover and let stand in a warm place for 1 hour, until doubled in size.

Preheat the oven to 425u00b0F. Brush two medium baking sheets with 1 tbsp of oil. Heat 2 tbsp of oil in a frying pan over medium heat. Saute the onion 5 mins, until soft but not browned. Add the garlic and cook another 2 mins. Set aside.

Punch down the dough and divide in half. Roll out and place on the prepared baking sheets. Brush with the remaining oil. Top with the potato, onion mixture, rosemary and goat cheese. Season to taste. Bake 20-25 mins, until golden and the potato is cooked through. Serve.
