Combine yeast, water and sugar and allow to stand 5 minutes until mixutre becomes foamy. Pulse dry ingredients in a food processor with the dough blade. Turn on processor and slowly add 1/2 of the liquid. Add Olive oil and then remaining liquid. As soon as dough comes together remove from processor and kneed for 1-2 minutes. Place dough in a lightly greased zipper bag and allow to slow rise in the fridge for 1-2 days.

Remove dough from fridge and Preheat oven with a pizza stone to 500 degrees for 30 minutes. Split dough into two equal balls and form pizza crusts. Par-bake for 5 minutes on a pan to set crust. Top and slide pizzas onto the stone. Bake at 500 for 5-8 minutes or until the crust is goldent and toppings are bubbly.
