2/3 c. long grain white rice
1 c. (4 ounce.) shredded med. Cheddar cheese
2 tbsp. chopped parsley
1 egg, beaten
1/2 c. lowfat milk
1/2 c. soft bread crumbs
2 tbsp. instant chopped onion
1 1/2 teaspoon seasoned salt
1/8 teaspoon pepper
1 1/2 lbs. lean grnd beef

Prepare rice according to directions.

Stir in cheese and parsley; set aside.

Mix egg with lowfat milk, bread crumbs, onion, salt and pepper.

Add in beef and mix well.

Turn meat mix onto waxed paper and shape into a 10x12 inch rectangle.

Proportionately spread rice mix over meat; press firmly, leaving 1 inch uncovered at each end.

Roll meat up in a pinwheel, removing way paper.

Place seam side down in shallow baking dish.

Bake at 350 degrees for 40 to 50 min.
