Pinehurst Muffins

   Sift together flour, sugar, soda, cinnamon and salt.

   Stir in carrots, pecans, apples, raisins and coconut.

   In a bowl, beat 6 eggs, then add 2 cups Mazola oil and 4 teaspoons vanilla.

   Stir in flour/fruit mixture until combined.

   Spoon batter in well oiled muffin tins.

   Bake at 350u00b0 for 20 minutes or until muffin springs back when touched.

   Let cool 5 minutes.

   Yields 36 regular sized muffins.
