Preheat oven to 300u00b0F. Lightly grease an 8x5 inch loaf pan. Line base and sides with parchment paper.

Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, until well combined. Sift in flour, alternately with milk. Mix in orange zest and vanilla. Fold in pineapple. Transfer to prepared pan and bake for 40-45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
