1. Make sure that hard bits and pieces of rind are removed from the pineapple chunks.

2. Shake the can of coconut milk very well before you open it.

3. Put pineapple chunks, the peeled banana, a cup of coconut milk and the water into the blender and blend until smooth.

4. Serve in two tall glasses. For decoration you can sprinkle some shredded coconut on top.

Tip: If you like a chilled smoothie than put the can of coconut milk in the fridge before using, or peel the banana, break it up into chunks, put it in a plastic bag and freeze it overnight. Bananas can be frozen this way and added to shakes and smoothies. A frozen banana in a smoothie will give it an even thicker consistency.
