Perfect Roast Beef

   Heat oven to 325u00b0.

   Salt and pepper roast, which should be at room temperature, so take out of refrigerator early.

   Place roast on rack in a shallow baking dish and put in oven.

   Roast for 1 hour, then turn oven off.

   Do not open door; it ruins the whole process.

   Allow 3 hours in oven to complete cooking.

   It can go a little longer, if needed.

   About 20 minutes before you want dinner on the table, turn the oven back on to 300u00b0 to warm up roast.
