Peking Duck Rolls

   Preheat the oven to 325u00b0F. Put the duck breasts skin-side down in a cold non-stick pan and cook them over medium heat for about 5 mins. Transfer to a roasting pan and roast in the oven for about 10 mins. Set aside to cool for about 30 mins then cut in 1/2 horizontally then into long strips.

   Spread the wraps thinly with hoisin sauce. Place 1/4 of the duck and 1/4 of the spring onions on each wrap, roll them up and press them down firmly. Heat 1 tsp oil in a pan and sear the wraps, 2 at a time for about 1 min until golden brown. Cut each wrap into about 6 rolls and serve them on a plate with extra hoisin sauce on the side.
