Preheat oven to 375u00b0F. Lightly grease and line an 8 x 10 inch baking dish. For the pastry base, beat 9 tbsp butter and the sugar together with an electric mixer until light and creamy. Beat in the egg yolk. Sift the flour, vanilla pudding mix and ginger together, then fold into the butter mixture to form a soft dough. Press into the bottom of prepared pan. Bake 12-15 mins, until lightly golden.

Meanwhile, for the filling, combine the condensed milk, remaining butter, brown sugar and golden syrup in a saucepan. Stir over medium heat 5-6 mins, until golden and thick. Spread on pastry base. Top evenly with the pecans, pressing into the surface. Bake 12-15 mins, until firm and golden. Cool in pan, then turn out onto a wire rack. Cut into rectangles and dust with powdered sugar to serve.
