For the Ice Ring:

In a large pot, Warm 12 sage leaves, lime zest, and water in medium pan for 10 minutes on low. Chill in fridge until very cold. Strain through a large mesh strainer permitting a small amount of zest and sage to travel through for visual in the ice.

Decorate bottom of ice mold with sage leaves and pear slices. Add in enough lime-sage water to barley cover pear slices and sage. Freeze for one hour or until frozen to hold pears and sage in place. Top off with remaining (very cold) lime-sage water. Freeze overnight.

Stir together punch ingredients in a punch bowl. Unmold ice ring by quickly dipping into warm water and inverting. Float ice ring in punch.

Ladle into tea cup or coupe glass. Garnish with lime wheels, pear slices and serve.
