Peaches and Cream Crepes

   In a bowl, beat eggs until smooth.

   Whisk in oil and water.

   Slowly mix in pancake mix until fairly smooth.

   Let batter stand for 5 minutes while you heat frying pan over medium heat.

   Spray pan with cooking spray.

   Pour 1/8 cup batter into pan and tilt to coat the pan evenly.

   Cook 30-60 seconds until top appears dry.

   Flip and cook 30 seconds longer.

   Place frozen yogurt and peaches in center of crepes.

    Wrap crepes around filling and dust with powdered sugar.
