Preheat oven to 425u00b0 F.

In a medium sized bowl, stir together the flour, salt and sugar. In another small bowl, whisk together oil, milk and almond extract. Pour oil mixture into flour mixture and mix gently with a fork until it comes together in a dough. Pour into an 8 X 8 pan, a tart pan or a regular pie dish (so many options!) and pat down using your fingers making sure to push crust up the sides about 3/4 of an inch.

Cut your peaches into 6-8 slices (I like to cut into four and then cut all four pieces in half) and arrange in rows over crust.

In a medium bowl combine remaining ingredients for filling (sugar, flour, salt and cold butter) and using your fingers, pinch ingredients together until pebbles form. Sprinkle sugar mixture over top of the peaches and bake for 35-45 minutes or until the filling is shiny.

Serve with freshly whipped cream.
