1. Preheat oven to 300u00b0F.

2. Set out 2 baking sheets.

3. Place racks on bottom and top third of the oven.

4. Combine oats, walnuts, pepitas, peaches, chia seeds and salt in a large mixing bowl and set aside.

5. Heat the coconut oil in a saucepan on medium heat and add the maple syrup. Stir until just melted and blended.

6. Pour the melted coconut oil and maple mixture onto the oat mixture and stir to coat evenly.

7. Place half of the granola on each baking sheet and place in oven.

8. Stir a few times during the baking time and halfway through, rotate the pans.

9. Bake for approximately 45 minutes or unti granola looks golden.

10. Once cooled, stir in the goji berries.
