2 tablespoons light olive oil
1 medium sized onion, diced
1 minced garlic clove
250 g mushrooms, sliced
1 1/2 cups cream
1/2 bunch fresh basil, chopped
150 g mersey valley cheese spread
salt and pepper
40 g grated parmesan cheese

heat the oil in a saucepan, add onions, garlic and mushrooms and saute until soft.

Add cream and simmer until sauce starts to thicken,.
