Pasta with Jeweled Beets

   Peel beets and cut into quarters.

   Place in a food processor and pulse a few times until beets resemble large grains of rice.

   Add olive oil to skillet or cast iron pan.

   On medium low heat, add garlic and stir for about 30 seconds.

   Add beets and continue cooking, stirring occasionally, for 57 minutes.

   Season and toss in chives.

   While beets are sauteing, cook pasta according to package directions.

   Drain and stir beets into the pasta.

   Season to taste with salt and pepper.
