1) Let eggs, butter, and cream stand at room temperature for 2-3 hours

2) Cook bacon or prosciutto chunks in skillet until crispy. Remove and drain on a paper towel

3) Heat an oven-proof serving dish in a 300 degree oven

4) Beat eggs and cream together until just combined

5) Add pasta to salted, boiling water and cook to directions or taste. Drain well and keep hot. The pasta actually helps cook the sauce.

6)Use same pot used to boil pasta to heat butter until hot

7) Add egg/cream mixture and 2/3 c. of cheese, then stir together, do not overcook

8) Add bacon to sauce, season with salt and pepper, and return pasta to pot and toss to coat

9) Turn pasta/sauce mix into hot serving dish and top with parsley and remaining cheese
