Ingredients: 2 (16 oz.) cans tomato juice; 2 (6 oz.) cans tomato paste; 4 cloves garlic (fresh); large white onion; 1 1/2 c. mushrooms; salt to taste; pepper to taste; butter or margarine; 2 Tbsp. sugar; Parmesan cheese

Combine paste and sauce in large saucepan or Dutch oven.

Add salt and pepper.

Slice and dice garlic, onion and mushrooms. Saute garlic in butter until golden brown; mix with sauce/paste. Heat until it bubbles.

Stir.

Saute onions in butter until limp; add to pot and stir.

Saute mushrooms until limp; add to pot and stir.

Reduce to simmer.

Simmer for 3 hours, stirring every 15 to 20 minutes.

After 2 1/2 hours, add sugar and blend.

Stir well. Sugar will blend flavors and kill the acid.
