Servings: persons

3 tbsp olive oil
8 oz ham or pancetta
15 oz Cannellini beans
16 oz peeled crushed tomatoes
2 cup water
1/2 cup red wine
1 medium onion, chopped
3 celery stalks, chopped
8 oz Ditallini pasta
1 salt & pepper, to taste

In a soup pot, sautee onions and ham in olive oil until onions and ham are translucent and a light golden color.

Add celery and continue sauteing a couple minutes longer.

Add beans and crushed tomatoes plus two cups of water, wine and salt and pepper.

Bring to a boil then lower heat and cover and simmer for 45 minutes.

Cook pasta separately, adding just before soup is served.
