1
Throw a big pot of water on to boil and while you are prepping the sauce have the pasta cooking so it is all ready at the same time.
-
2
Cook the pasta as per the package directions.
-
3
Start by chopping your veggies.
-
4
We need to dice up the tomatoes and set them aside, finely dice the onion and mince the garlic.
-
5
Heat the olive oil in a saucepan over medium heat and add the onion.
-
6
Saute for a minute or two until softened and then add the minced garlic.
-
7
Make sure you stir so the garlic doesnt burn.
-
8
Once the garlic is fragrant, add oregano, red pepper flakes, salt, pepper and tomato paste.
-
9
Stir together until the tomato paste is combined with the other ingredients.
-
10
Add the fresh tomatoes, tomato sauce and half and half and stir.
-
11
Taste it and add more salt and pepper to taste if needed.
-
12
I also ended up adding about a tablespoon of sugar because I felt like it needed it.
-
13
Let it simmer away for a few moments until nice and hot.
-
14
By now the pasta should be done.
-
15
Drain the pasta and toss with the sauce.
-
16
Add it into a big bowl or serving dish.
-
17
Grate a generous amount of Parmesan cheese over the top and serve with some garlic bread for dipping.
-
18
YUM.
