Passionfruit Curd Recipe

   ---Prepare Ingredients---

   Beat eggs and strain into a bowl

   Add all sugar, butter, water, and passionfruit juice to bowl

   Cook all over a bain marie, stirring constantly

   Cook until the mixture coats the back of a spoon

   ---Cool Down---

   Strain through a fine strainer and cool down over ice

   ---Serve---

   The curd can be spread on toasted brioche or served with fresh fruit and is also served as accompaniment for cakes
